We just got home from an incredible Carnival Celebration cruise with some dear friends.
We ate like kings and queens the whole week. One of the dinners was Italian which is one of my favorites! I had chicken parmigiana which was delicious! It came with a side of spaghetti carbonara which I cannot say enough good things about. I wish I had a huge plate of it!!
When I came home, I was determined to find a recipe that tasted as close to it as possible.
I googled “copycat recipe spaghetti carbonara carnival cruise” and I tried a couple of different ones.
The first recipe called for way too much heavy cream. It reminded me of al fredo sauce which was too heavy for me. Daughter #2 who LOVES pasta did not enjoy it!
BIG FAIL!!
My second attempt was way more successful. Daughter #2 was not home (she’s at college) so I sent her a picture and told her it was delicious. She was so jealous!!!

- 12 oz spaghetti
- 2 egg yolks
- 1 oz bacon 1" slices
- 2 oz Parmesan cheese grated
- 4 tsp Parsley chopped
- 2 oz white onion chopped
- 4 cloves garlic chopped
- 1.5 oz heavy cream
- black pepper to taste
- Salt to taste

- Bring 3 quarts of salted water to a boil.
- Add spaghetti and cook for 8 minutes.
- In a small bowl, whisk the egg yolk, cream, and parmesan cheese.
- Pre-heat a skillet over medium heat. Add the bacon and saute´ for about 3 minutes or until things are looking nice and crispy.
- Add garlic and onion, then saute´ them for one minute.
- Add the pasta and chopped parsley. Toss the whole thing to combine all ingredients.
- Pour the egg and cream mixture into the skillet and toss some more to heat the mixture and evenly coat the pasta.
- Add grated parmesan cheese. Serve and Enjoy!
