We recently celebrated our DIL #1s birthday.

She asked for carrot cake cupcakes and because she is on a keto diet I found this great recipe for carrot cake using almond flour on the blog Wholesome Yum.

Instructions
  1. Preheat oven to 350°. Line cupcake pan with liners.
  2. In a large bowl, cream together the butter and erythritol, until fluffy. Beat in the molasses (if using), vanilla extract, and pineapple extract (if using). Beat in the eggs, one at a time. Set aside.
  3. In another bowl, mix together the almond flour, baking powder, cinnamon, and sea salt. Stir the dry ingredients into the bowl with the wet ingredients.
  4. Stir in the grated carrots. Fold 1 cup of the chopped pecans, reserving the remaining 1/2 cup.
  5. Transfer the batter evenly among muffin cups. Bake for 30 minutes, until tops are springy.
  6. While cupcakes are cooling, make low carb keto cream cheese frosting without powdered sugar.

Wholesome Yum also has a great cream cheese frosting.

Instructions
  1. Use a hand mixer to beat together the cream cheese and butter, until fluffy.
  2. Beat in the sweetener and vanilla, until well incorporated.
  3. Add cream and beat again, until creamy. You can adjust the amount of cream to desired consistency.

 

The whole family enjoyed the cupcakes. Score!
