Have I told you how very lucky I am to have the LOML in my life??!! On his birthday, Valentine’s Day, he bought me these beautiful roses, my favorite!

He also took the day off of work, let me sleep in, and took me out to breakfast at Waffle House (our favorite!).

For the LOML’s Valentine’s birthday celebration, the family went out to his favorite barbecue joint in town. Then everyone headed over to the house for some birthday singing, presents, and, as always, eating.

Instructions
Keto Vanilla Cupcakes
  1. Preheat oven to 350°.
  2. Combine the butter and sugar in a large bowl. Mix. This may take some time. Ensure the butter and sugar are fully mixed.
  3. Combine the almond flour, coconut flour, salt, and baking powder in a separate bowl.
  4. Add the eggs, sour cream, and vanilla to the butter and sugar. Mix.
  5. Add the flour and dry ingredients to the wet ingredients (egg and butter mixture). Mix. Be careful not to over mix. Over mixing will result in air bubbles in the batter.
  6. Line a 12 count muffin tin with cupcake liners. Spoon the batter into each tin.
  7. Bake for 26-30 minutes until toothpick comes out clean when inserted into middle of cupcake.
  8. Allow the cupcakes to fully cool before frosting them and before removing them from the liners. They will fall apart if not allowed proper cooling.
Keto Buttercream Frosting
  1. Combine the butter, heavy cream, and vanilla. Mix.
  2. Add in half of the confectioners sugar. Mix. Add the other half and mix.
  3. Load a pastry bag with the frosting. Secure the piping tip on the end of the bag. Frost each cupcake.
