PARMESAN SHRIMP AND BROCCOLI WITH PENNE PASTA

Today is Daughter #2’s fifteenth birthday!

This sweet girl joined our family when she was one year old. She was a tiny 17 pound, runny nosed little cutie pie. And we fell in love with her the minute she was put on my lap!!

Today we asked her what she wanted to do for her special day.

We had lunch at her favorite Thai restaurant and we went and saw “Aladdin.”

Great movie, great music, and I absolutely love Will Smith so I knew I was going to love it! Daughter #2 also loved it so it was a WIN for cool parenting!

We also made the birthday girl her favorite meal which I wanted to share with y’all.

PARMESAN SHRIMP AND BROCCOLI WITH PENNE PASTA

  1. Cook penne pasta as directed on box.
  2. Strain, return to pan and set aside.
  3. In a small pan, melt butter over low heat, add garlic and 3 tsp of salt.
  4. In large frying pan over medium high heat, add 2 Tbsp oil, tsp of salt and onions. Saute until caramelized.
  5. Remove onions from pan and set aside.
  6. In the same large frying pan, heat 2 Tbsp oil, tsp of salt and minced garlic. Saute for a minute then add shrimp. Cook for 4-5 minutes until shrimp is pink and opaque
  7. Remove shrimp and set aside.
  8. In the same large frying pan, heat 2 Tbsp oil, tsp of salt, and a large tsp minced garlic. Add broccoli and stir fry for a minute.
  9. Add shredded carrots and 1/4 cup of chicken broth, cover and steam for 3 minutes.
  10. Combine all ingredients (melted butter, onions, shrimp and broccoli) with the penne pasta.
  11. Top with parmesan cheese and serve.
